This is a regular in our household and its very easy to make and healthy! With just two ingredients, three if you like it a bit sweeter, you can have coconut milk for smoothies and other purposes.
Ingredients
4 cups (960 ml) water
2 cups (150 g) unsweetened shredded coconut
1 date (with pit removed) as sweetener
Instructions
Place all ingredients into the blender container in the order listed and secure the lid.
Start the blender on its lowest speed, then quickly increase to its highest speed.
Blend for 1 minute or until desired consistency is reached
Please note:
You may adjust the water quantity to suite your taste (full milk or 2 %). Store air tight in refrigerator. Always shake well before use. Might require straining for some purposes.
